BUDGET RECIPE OF THE MONTH


Leek & Bacon Flan

  • You can use white onions instead of leeks.
  • Enjoy leftovers cold.

Serves 4
Preparation: 15 minutes
Cooking: 45 minutes

2 tablespoons vegetable oil
2 leeks, pale section only, thinly sliced
4 bacon rashers, rind removed, finely chopped
2 cloves garlic, crushed
375g broccoli, cut into florets
4 eggs
1 cup milk
1 cup grated tasty cheese

  1. 1 Preheat oven to 180ºC/160ºC fan forced. Lightly grease a 4.5cm-deep 24cm (base diameter) round pie dish. Heat oil in a medium frying pan over moderate heat. Add leek, bacon and garlic; cook and stir for 4-5 minutes or until leek has softened.
